Roasted Potato Fries with Bacon Chive Dip
Roasted Potato Fries with Bacon Chive Dip
You will need-
4-6 medium potatoes, cut into wedges
olive oil
salt
pepper
1 pint sour cream
1/2 pound bacon, cooked and finely chopped
2-3 tablespoons chives, finely chopped
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
Start off by roasting the potatoes-
Put the potatoe wedges on a large sheet pan, drizzle with olive oil and sprinkle with salt and pepper. Toss to coat and spread into a single layer.
Cook in a 425 oven until golden brown, flipping the potatoes half-way through cooking to ensure both sides brown.
Meanwhile-
Mix the bacon, chives, salt and pepper into the sour cream and mix thoroughly.
When the potatoes are done serve with the dip and enjoy!
